Gastronomical flair flows throughout – there’s an eccentric selection of share plates, including Chili Jam Doughnuts, Charred Goat Ribs and Cocoa Dusted Quail; some equally inspired mains; and decadent desserts, but it’s Cove’s exotic oyster collection which really makes a splash. There’s no place for the humble Oysters Kilpatrick on this menu – it’s a much more cultured affair with accompaniments including Watermelon Granita & Lime Salt, Cucumber & Pimms Gel, King Salmon Confit & Crème Fraiche and the pièce de résistance and signature creation Bubbles, starring Moet & Chandon Gel, San Pellegrino Emulsion & King Salmon Pearls.
