OTTO Brisbane has unveiled the dessert of the season and it is primed to become your next post-lunch treat or date-night highlight. Boozy Dolci: Summer Edition takes their much-loved vanilla pannacotta and elevates it over granita inspired by Italy’s most iconic liqueurs and cocktails. Picture an Aperol blend with Prosecco and orange, an Espresso Martini with Mr Black, vodka, cacao blanc and espresso, a bright Limoncello option, and a classic Negroni with gin, Campari, vermouth and orange. It is Italy’s greatest cocktail moments, reimagined as the ultimate cool-down dessert.
The genius lies in the contrast. The icy granita delivers a refreshing snap against the smoothness of the pannacotta, giving Brisbane diners exactly what they crave as temperatures climb. Each flavour is layered with its own jelly sitting between the pannacotta and granita, adding colour, texture and a little burst of nostalgia. These jellies carry the core cocktail notes, so every spoonful feels playful, clever and unmistakably summer.
Head Chef Will Cowper says, “Our Boozy Dolci dessert is all about contrast; the chill of the granita against the pops of the jellies and the creaminess of the pannacotta. It’s a dish that inspires curiosity, combining Italy’s favourite cocktails with a dessert, and is a unique way to raise a glass to summer in Brisbane.”
